Let me show you a delicious pancake recipe I enjoyed this morning, all vegan! I found this recipe through the ”Color me Vegan” cookbook by Colleen Patrick-Goudreau and they are really yummy and easy to make. I also find them much more filling then regular pancakes. Plus, they’re all vegan.
To keep them as healthy as possible buy all natural peanut butter with no sugar added, or do what I did and make your own, it’s surprisingly easy! Scroll down for more info.
Here’s an old picture of mine to show you how easy it is to make your own peanut butter.
Use non-salted, natural peanuts, roast them in a dry pan, add salt and mix them,
(at least 10-15 min) and that’s it. The colour the butter get depends on how much you roast them. The longer the browner. But be careful so you don’t end up burning them. Good luck!
