Stuffed mushrooms

I do like me some mushrooms and what I like about portobello is that they don’t shrink as much as a lot of the other kinds do.


I did a mixture of scallions, nectarines, hoisin-sauce and pistachios. I served it with pasta made out of mung beans and on top some of my homemade parmesan cheese, which you can find here.
