Raw Brownies

It’s all about raw food these days and here’s a really nice ”brownie” recipe full of healthy things for you.

2 cups whole walnuts, divided
2 1/2 cups Medjool dates, pitted
1/2 cup raw oats
1 cup raw cocoa/cacao
1/4 teaspoon sea salt
1-2 tablespoons cocoa for dusting
Place 1 1/2 cups walnuts and the oats in a food processor and blend on high until the mixture is finely ground.  Add the cocoa and salt and pulse to combine.  Add the dates one at a time through the feed tube of the processor while it is running.  The mixture should be crumbly but hold together when you squeeze it between your fingers.  Roughly chop the remaining 1/2 cup of walnuts and combine with the walnut-cocoa mix.  Press the mixture into a 9×9 pan.  Place in the freezer or fridge until ready to serve, it is easily to slice the brownies when they are cold. Dust lightly with cacoa before serving.  Store in an airtight container in the fridge or freezer.

Psst, you know walnuts are great right? They’re very rich with Omega-3 and also contains a high amount of B&E-vitamins and iron among other things.
