I’m not sure if this dish is a thing in the rest of the world but in Sweden we have a thing called Raggmunkar and basically what it is is finely grated potatoes in a pancake batter.
It’s one of my favourite dishes and I actually hadn’t made it since after going vegan so this past weekend I decided it was time.
Now, most people eat these with fried bacon and lingonberry jam – not me though – I’ve always prefered strawberry jam with them. I get some weird looks… haha.
Right, here’s the recipe, make them for breakfast, brunch, lunch, dinner, snack – whenever!
500ml of non-dairy milk, such as Oat milk or Almond milk
4 dl of flour. (I used 1 dl spelt flour and 3 dl of regular white flour)
2 tsp baking powder
1 tsp salt
Then add 700 gram of finely grated potatoes, make sure to squeeeze out excess water first!
Fry on medium heat – I tend to fry them on lower heat for a longer time to make sure the potato gets done properly.
