The perfect Friday food comes in the form of these yummy Quesadillas. Super easy and quick to make. Make your favourite Hummus recipe and spread between two tortilla bread, I use the extra thick kind.
Fry soy mince with some water, salt, pepper, chili, turmeric and powdered cumin.
Add some slices of your favourite mushrooms and about half a zucchini, cubed.
Spread the mixture onto the breads and put two of them together, add them to the pan and fry until they get a bit of colour on them.
