I’d been craving oatmeal cookies for several weeks and this weekend I finally got around to making some. Not one kind but two kinds of cookies! Double the fun! Don’t ask though  how many I ate…Let’s just say they were taaaasty!

Got myself a cup of Sweet Chai Tea to go with them. YogiTea are really one of my favourite brands because they come with so much flavour. Plus, the quotes on the tea tag is pretty cute too.

Oh, I’m guessing you want the recipes? Sure thing, here goes:

Oatmeal Cookies (by Colleen Patrick-Goudreau)

2 TBSP ground flaxseed (two eggs)
6 TBSP water
1 cup (225g) butter
1 ½ cups (340g) light or dark brown sugar
1/4 cup (50g) granulated sugar
2 tsp vanilla extract
1 3/4 (220g) white flour
½ cup (50g) oat bran
3/4 tsp baking soda
3/4 tsp baking powder
½ tsp salt
½ tsp ground cinnamon
½ tsp ground nutmeg
3 cups (240g) rolled oats

Preheat the oven to 350F/180C

Whip together, by hand or machine, the flaxseeds and water until thick and creamy.
Cream together the butter, sugars, vanilla, and flaxseed mixture, until well blended.

In a separate bowl, thoroughly combine the flour, oat bran, baking soda, baking powder, salt
cinnamon, and nutmeg. Add to the butter mixture and mix until well blended and smooth.
Stir in the rolled oats until well combined.

Form small balls of dough. Yield about 36.
Bake until the cookies are golden brown, 12-15 min.

Super thin oat cookies

75g butter
1 dl rolled oats
1 dl white flour
1 dl white sugar
2 TBSP cream or milk
2 TBSP syrup
1/4 tsp baking powder

In a saucepan, melt the butter. When melted add all ingredients and stir till you get a good mixture.

Drop a small spoon of batter onto a baking sheet. Will give you about 30 small cookies.

Bake them for 5 min in a 200 C hot oven.
